Police are now appealing to anyone who has information to come forward.
Detective Constable Dave Potter, of Bury CID, said:
"It is clear we are looking for an opportunistic thief who targeted this man just to get hold of his winnings.
"It is desperate act and the man he robbed deserves to know who his attacker is and see justice done.
"This happened at a time when there could have been a lot of people in the area with either shoppers or workers either returning to their cars or out in the area.
"I would urge people to look at the pictures we have released and if you recognise this man, please call us.
"I also want to hear from anyone who might have been in the betting shop at this time who either saw this man or thinks they know who he is to come forward."
